FAQ & Help

What is a wine margin calculator?

A wine margin calculator is a simple tool you use with your real numbers: what you pay for a bottle or glass and what you charge on the menu.

It turns those inputs into cash margin and a GP percentage so you can compare wines and policies without guessing.

Our calculators follow UK hospitality practice: menu prices include VAT.

Purchase costs are tracked including duty but without VAT, which a VAT-registered venue reclaims, so your margin reflects what stays with you after VAT and wine cost.

What is margin?

For each sale, think of margin as what is left after you strip out what does not belong to your operating margin on that wine.

Wine margin = selling price → minus VAT included in that price → minus purchase cost.

In other words: guests pay the menu price, including 20% VAT.

You remove the VAT portion (one sixth of the menu price) to get net revenue on that sale, then subtract your bottle or pour cost (excluding VAT on the purchase).

What remains is the gross profit from that wine before overheads such as wages, rent, business rates and wastage, which you still must cover from margin across the business.

GP percentage is expressed on net selling value (after VAT): it tells you how much of each pound of wine revenue stays as gross profit at the line-item level.

How much margin do you need?

There is no universal magic percentage: your fixed costs, volume, and positioning decide what wine must contribute to the P&L.

You have to know this number—or work it out deliberately—otherwise pricing becomes guesswork.

Define a target wine margin that fits your venue, then use the calculator to check whether individual list prices and by-the-glass pours actually hit it.

When they do not, you adjust price, cost, pour size, or placement—not hope.

Where does the markup multiplier fit in?

Markup multipliers are a blunt tool, and a dangerous one if used alone.

They are simply the ratio between your selling price and your purchase cost.

Many think you can set wine list prices just by multiplying cost by a fixed number, usually three.

You cannot build a high-performing wine list with a markup multiplier. Apply it blindly and you will inevitably damage your list.

Why? Because a flat multiplier ignores VAT, guest perception, differing fixed costs, and the price sensitivity of different wines.

Premium bottles, low-cost wines, and everything in between demand nuance, not pricing with a multiplication.

Instead, focus on your required margin (after VAT and cost) and your business reality.

Use the calculator above to get it right for every wine, not just as a multiple.
